Washington's Food Service Rules: Keeping You Healthy and Safe

Washington’s food service rules are here to help keep you healthy and safe, whether it’s delivery, take-out or dining-in. We are currently updating the state’s food service rules to consider the newest federal food code and issues related to food trucks, donated food, employee health, food manager credentials, returnable food containers, and bare hand contact of foods, notice of undercooked foods, and more. In addition, the Board will incorporate changes relating to mobile food units that exempts the requirement for commissary kitchens and servicing areas for mobile food units that meet certain criteria.
